I would like to compare the new version of your background removal tool with the former one. However, I can’t find any resource in your documentation about an argument controlling the version used when an API call is made. Could you please indicate me how I can achieve this?

Generally speaking you would be able to find all of our endpoints listed here. You can test the new background removal version announced by using the pr-background-removal-model-version header set to 2025-03-28

Just for the future: I can see all the available endpoints via the link your provided. However, there is no field for pr-background-removal-model-version in your header section, it would be great to add it (even if you plan to depreciate the legacy version soon).
